These are lovely, I tried them yesterday:-
50g/2oz butter
100ml water
50g/2oz plain flour
Salt
Potatoes. (about 3 depending on size).
Good quality Oil for deep frying.
Boil and mash potatoes.
Put butter and water on heat, boil. Once butter has melted, add flour and beat until smooth.
Weigh choux mixture and add same amount of mashed potatoes. Mix well.
Using a small spoon (I prefer to use my hands) make small balls of the mixture.
Heat oil until very hot. Deep fry until puffy and crispy. Drain on absorbent paper so no excess oil.
