Who loves MaHshi? I DO!!!!

Ok, yesterday someone from my office was kind enough to bring pots and pots of MaHshi prepared by his family. Not just one kind, but fil fil, the vine leaves one, the egg plant one AND onion MaHshi! The first time i've seen or heard of it! (But i don't like Onions so didn't try it :cry: )

Anyway this got me thinking because another guy at work is married to a woman that makes the best and smallest MaHshi Curumb that i (or anyone else in the office) has tasted or seen. Unfortunately she only prepares it for us once per year during Ramadan :(

What do you all think of a "Mahshi festival" like the beer festival in Germany? I would of course be a judge :roll:

Here is a small tip for a better Ma7shi: Add a small spoon of turkish coffee to the rice.. and stuff the Veg.

Another tip........... this is getting hot and juicy:
1-While boiling rice ... add little vinigar and you'll get Very White Rice, and while we're in the subject of rice.... after you're done.. Be carefuk, move the covered pan upside down for 10 minutes to let the vapour work its way down.

2- When you boil green beans.. add some becarbonaat to the water, and get a very green, green beans.

3- When you boil carrots, add half tsp suger....... looks great.

4- This is the best. Maybe Laura would know it as she lives in Alex.. after you're finished with your rice, get a small piece of Mestekka.. add little oil.. fry the mestekka.. pour the melted mistekka on top of the rice.

wooow...this mahshy thread..is getting better and better..

Ok, the carrots I tried...
The mesteka I will try tomorrow...(Laura, are you going to try it? ) and the vinegar too..

I Have a question about mahshy ...

Mahshy waraq 3einab...do you put some lemon in the water that covers it when it's time to cook it, or do you put lemon on the meat mixed with rice...or no lemon at all?

Bossy ya Monica... put your lemon during the last process(the heating process) Never allow lemon to be cooked- tends to develop a bitter waraq 3enab.

Mestekka.... I have no idea... Monica sure knows it, but you can buy it from any supermarket.

never measure adds flavour to the meal :lol:

The Mestekka improves mouth feel as it encapsulates flavours, and is referred to as : GUM ( within the spices department here in Canada) or vegetable Gum, it is a stabilizer, thickener, gelling type of ingredient ...also used in cosmetics wallahy... for face lifts too... he he he...

So here is a creative thought;
melt the Mestekka let it cool and splash it on your faces..ah ah ah ...can't wait to do that exercice!!!

I think...not 100% sure, that it is derived from the acacia tree....

Ok here we go again me and my questions..you guys talk about MaHshi that it sound like..yumm yumm..I don't quiet know what it is, if anyone could explain it. Is it like a lunch thing or do you serve it with some other food or is it good just by itself?

First of all Luana..welcome on the Miam Miam thread :lol: :lol:
lemme tell ya ....what MaHshi is ...and you are on the right forum for questions abouit Egypt as we have a bunch of experts here that go the extra mile...we love Egypt see...and our purpose is to make everyone love it..kind of..he he he
ready girl??? let's go:

MaHshy : means stuffed
Soooooooooooo we stuff vegetables:
Zucchini
Eggplants
Green peppers
and more....One thing that we stuff that does not look stuffable is: Wine/grape Leaves...in Greece and other Middle eastern countries they do too; some serve it cold with added lemon...but we like it hot hot...

The stuffing is a combination of rice meat and herbs/spices...and.....the latest tip from our favourite Chef here ( jaguar that is...) is to add coffee....gotta try that one on you jaggy baby :roll: :roll: :roll:
ideally it is served with a yogurt and garlic mix type of dressing....with cucumbers slices inside...and lamb would be the meat du jour...and that stuff stuffs big time stuffing girl!!!
